"... my mamma said: 'Izzy, make me some nshima!'"
I went to the local nshima place for lunch everyday. The restaurant, called Bethel's House of Food, was a little hole in the wall place, set right around the corner from Fountain. Bethel is such a lovely woman and makes some amazing food, which I had the honor of learning how to make.
Nshima is a national delicacy, made from maize meal, water and salt and rigorously stirred over an open fire for hours. It is traditionally eaten with grilled or stewed chicken, fish, goat or beans, with soup (gravy) and local vegetables and is eaten with the hands. The traditional vegetables are braised cabbage and rape, a local collard green.
If I was not at Bethel's, I could be found enjoying some nshima at another cherished establishment called Divine Power, located in close proximity to the Sport in Action office.
Although I frequently went by myself, as everyone had vastly different schedules, I also had the opportunity to share a meal with some locals, like one of my peer leaders Isaac.
